Here's how I do it. I model an elevator shaft as a single thermal zone (multiple spaces but one thermal zone). I attach to that zone an ElectricEquipment object with the rated power of the elevator and I use the elevator operation schedule from ASHRAE 90.1-1989 (also in ASHRAE 90.1-2007 User's Manual) for the building type being modelled (retail, office, etc.). I modify the schedule to fit the actual operation hours of the building.

And yes, this is necessary for App G of ASHRAE 90.1/LEED. The elevator energy use is considered as process energy.
