I am currently modeling a building when I got to HVAC and I'm increasing the CoP of the system (Packaged DX- Cooling only) to see the effect of using a more efficient HVAC system. However, upon simulation the energy consumption that does not change?

If you are using DesignBuilder Simple HVAC model option then the COP entered at HVAC tab will only affect the electric energy at Fuel breakdown graph. One thing to confirm is if the inheritance from upper levels has not been overridden and the COP changes made at building level are not being used at zone level. Data in blue color means that the inheritance from upper level is kept.

If you are using DesignBuilder Detailed HVAC model option then the COP field at HVAC tab is not used in the annual simulation. In this case you are modelling the HVAC system in detail and the COP settings will need to be made at the component level on HVAC system screen.
