No, you don't have to set the construction for each surface. Also instead of setting a construction set for each space, you can also set it for the building, then only set a special construction set for a space if it doesn't follow the normal default behavior, for example an attic space. If you are missing any thing and a construction isn't assigned to a surface, you will find out with your simulation failing, and the eplusout.err file will mention the surfaces that are missing a construction.

The text you are seeing in the field in the SketchUp Plugin are hard assigned constructions. If you go to the render by construction, render mode, and click the render mode again once you are already there it will switch between showing only hard assigned constructions and inferred constructions. If you are looking at surfaces in the OpenStudio application you see inferred constructions as green.
