When you open a 2.6.2 OpenStudio model in 2.7.0, it updates to 2.7.0, but that update is just in memory. If you then save the model (or SaveAs if you want to be save) and re-open it, the model should now be a 2.7.0 model, and will not have to update.
Regarding the surface matching, think of the wireframe in the SketchUp plugin as a kind of progress bar. When it gets stuck in wireframe, something went wrong with the current process it is working on. If you open the Ruby console in SketchUp it may provide details. Specifically for intersecting surfaces, please try and use the Surface Matching measure with argument to intersect surfaces described in this post. The measure should be run in the OpenStudio Application using the apply measures now feature, saved, then you can re-open it in the SketchUp Plugin.
