If you are importing the DXF of floor plans in the model, you could select multiple floor area portions in SketchUp that should have the same floor-to-ceiling height and simultaneously create Spaces using the "Create Spaces from Diagram" tool. That would definitely be faster than creating Spaces individually. From the workflow in your original post, it kind of sounds like you are only creating one Space for the whole model, instead of one Space for each room in the model -- make sure to use multiple Spaces instead of one.

Also, be sure that you are saving the .osm file using the menu Extensions, OpenStudio/File/Save OpenStudio Model
and not the .skp file using the menu File/Save
or the keyboard shortcut Ctrl+S
.
I would recommend looking at NREL's tutorial videos for OpenStudio on YouTube. These videos may be years old, but the general process is still very similar.
