Like you say, there is no real steam humidifier object in EnergyPlus. You'll have to be creative, either in post-processing the results from the electric humidifier, or use EMS to drive a steam process loop.

For the EMS solution, you can use the humidifier's water flow rate and/or electric power variables to actuate the process schedule on a separate, closed steam loop. This would at least get at the amount of energy required by the steam loop. You'd then have to subtract the electric power to the humidifier from your total electricity use.

I know it's not ideal, but maybe it's better than nothing.
