You would probably want to change your Plant Loop rather then the coils behavior. If you do have a SetPoint Manger in your plant loop and you use a schedule to set the plant loop temperature, you could set the temperature to be high during the winter, which will make sure the plant is off.

If that will not work for you, you could try the OS measure I wrote to add schedule AM to Plant Loop of your choice. You will need to create a new measure in OS tab by clicking the green plus on the lower right corner. Leave all defaults and click the create measure and open for editing button. Now you need to select all text in the measure.rb file and paste the content of the measure.rb file in the above link into your file. When that is done you will need to run the measure using Apply Measure Now in the Components &Measures menu since you need to run it only once.
