You should be able to find the U, SHGC, etc from the EnergyPlus HTML output. If you are using the OpenStudio Results reporting measure, it's shown by default on the results tab, but there's a dropdown that allows you to select the EnergyPlus output report. It's also available in the model/ folder if you want to open it in your favorite internet browser (helpful for search, copying table, etc).

All default constructions you'll find in OpenStudio that reference a standard implement exactly what the standard says. For example construction named ASHRAE 189.1-2009 ExtWindow ClimateZone 6, means it's the direct implementation of the construction properties listed in standard ASHRAE 189.1-2009 for an exterior window in climate zone 6.
