Excel used to have a limit of 256 columns, so EnergyPlus limited the number of output columns to that. Modern versions of Excel no longer have this limitation. I don't know how you are running your EnergyPlus simulations, but EP-Launch for example has an option under View > Options > Miscellaneous where you can check "Allow More Than 250 Columns".
