I am trying to co-simulate EnergyPlus and matlab using BCVTB. During this simulation, some data will be exchanged between EnergyPlus and matlab.

I was wondering if it is possible to exchange this data at each time step of EnergyPlus. For example, if the number of time steps per hour in EnergyPlus is set to 60 (as shown in the screenshot), which is a time step of one min, is it possible to exchange these variables every hour?

@Zakaria have you already searched Unmet Hours for "energyplus bcvtb"? There is also the External Interface Application Guide, which has more details for coupling EnergyPlus to BCVTB and functional mock-up unit/interface (FMU/FMI) components, as well as a Google Group for BCVTB.

Does that answer your question?

Yes it is possible to exchange data between EnergyPlus and Matlab at each EnergyPlus zone time step using the BCVTB. Please check the BCVTB documentation as well as the Matlab and EnergyPlus examples that are distributed with the tool.
