I would like to know how to parameterize internal mass in EnergyPlus. ie. the internal mass of furnishings, internal partitions, occupancy, etc.

You can define the layers of the construction and the area exposed for the internal mass. Changing both of those will impact the storage capacity, and the rate that mass is charged or dis-charged. In addition to internal mass object, there is also the mass between zones and at the exterior envelope that are defined though the zone heat transfer surfaces.
