When OpenStudio runs it produces all of the E+ outputs that you can use in Excel to create graphs. I have found that the easiest way to do this is to copy and paste data from the eplustbl.htlm output file into an Excel spreadsheet. This file is located in the project folder -> run -> 4-EnergyPlus-0 -> eplustbl.htm. The file has tons of data in spreadsheet form and you can find out more about it in the EnergyPlus InputOutputReference document.

If that file doesn't have what you are looking for you can also look into the eplusout.sql file.
