Does anyone know where or if I can change the room-air-model in OpenStudio? I know how to change it in IDF-editor for EnergyPlus, but does the feature exist in OS?

These objects are not available at the moment in the OpenStudio GUI nor the API. The OS dev team might be able to tell you if there's a plan to integrate these in the future or not.

In the meantime, you could write an EnergyPlus measure to add these objects before the simulation runs. See the Measure Writing Guide - Advanced Topics

Okay thanks for the information and help :D Do you might know if OS then as a default or standard room-air-model? e.g. fully mixed?

Just like EnergyPlus, fully mixed indeed. Called "Well-mixed" it seems actually. Check out the table here to verify that by default it's Well-mixed.
