The fist question regarding 8760 hours of data requires a reporting frequency of hourly. If you use Output:VariableDictionary,IDF; then the rdd file will show VRF related report variables as:

These can be copied directly into your input file. You would most likely want to use the energy variables as they can also be summed to yield annual energy use. Also note that the rate (W) reports, on an hourly basis, yield Wh and can also be summed. If these summed data are divided by 1000, the result is kWh/year.
Note that these data will not actually show the cooling and heating loads unless the zone thermostat temperature set point is maintained, which is not likely with VRF systems.
The zone loads can be reported using (again, summing will provide kWh/year):

Alternately, using the zone energy transfer report variables, the delivered capacity from the terminal units can also be reported. These variables report the air-side energy entering the zone through the zone inlet nodes and are calculated with respect to the current zone temperature.
