For the heating and cooling thermostat schedule you will need to create the default schedule and then add priority overrides based on date. Make sure to assign that schedule as your cooling equipment availability schedule. For activity, there are two types of schedules. One schedule is for assigning the number of people in the space. This schedule is fractional from 0% to 100% occupancy. Another schedule is for assigning activity level, typically as watts per person. I would recommend importing some of the space types available in the libraries for good examples on how to apply these.
