Take a look at the section of the Input Output Reference that discusses chiller output. I think you are looking for Chiller Evaporator Cooling Rate and Plant Supply Side Cooling Demand Rate. This will tell you how much cooling is performed by the chiller and the actual demand load on the chilled water loop throughout the simulation.
