It is not exactly as you have described (not sure what you mean by "how much sky can be seen") but you can find the fraction of the room (at observer height if you place there the working plane) that can see the sky.

You can find it at DesignBuilder's Online Help - Daylighting Calculation Options

Scroll down to the Advanced Options section and you'll find:

Tip: It is also possible to estimate the fraction of the working plane that can "see" the sky by using a diffuse sky model, like the overcast day sky. In this case set the number of bounces to 1 (see above). Use the grid output setting the Illuminance threshold display option to 0 and view the Floor Area above Threshold data in the Grid output.
