To set temperatures and humidity ratios on coils you need to use setpoints. I know how to find these in EnergyPlus but not 100% sure in Openstudio, there are plenty of people on here who know how. But look for setpoints these will control the coils. It does depend a bit on how you set up your system though. If you are using a zone system the setpoints won't work in this way it is easier to control the systems when you set them up as AHUs.
