At this point there is no way to output temperatures within the slab or the soil surrounding the foundation. The temperatures vary in two dimensions and there isn't yet a convenient way to export the two-dimensional temperature map of the foundation and ground into the normal time series output of EnergyPlus.
The only outputs available are the inside surface variables. See the documentation for a more thorough explanation.
