I’d like to keep one thermal zone at a fixed RH (e.g., 50%) all year in simulation. Is this actually achievable in EnergyPlus—and if so, what’s the correct control strategy/object setup?

Hi, bro. I think your idea is possible. You can edit a new schedule and apply it in Humidifying Setpoint Schedule for your thermal zone. In HVAC system, especially airloop of that zone, you can also add a humidity setpoint on before the node air in zone, then i think you can keep the thermal zone at a fixed RH if your coolinequipment work well.
